CHEAT'S Chicken & Tarragon Pie
I served mine with Delia's cracked potatoes with melting cheese and spring onions. (I used a grating of parmesan cheese (Lidl) instead of gruyere). Some nice steamed green beans and carrots. ENJOY.
MethodTake the pastry sheet and roll it out a little thinner, then divide this into 6 oblongs, about 6 1/2 inches by 4 1/2 inches. Set one to one side. The others, layer between sheets of grease proof paper and pop into the freezer. You now have 5 ready made pie lids. These can be used for savoury or sweet and straight from the freezer. When using for a sweet dish, just sprinkle on a little sugar, sweetner and or spice.
In a bowl, mix the chicken, tarragon and add salt and pepper to taste. Pop this into an oblong oven dish.
I got mine from ASDA, smart price 60 pence each. A bargain and perfect for 2 people. Top with the pastry lid, brush witth a little milk and bake for 20 to 25 mins at 200C or until nicely golden brown.
