Butternut Squash Stew

Top with some greek yogurt and grated cheese



2 tbsp oil,1 sliced onion,2 crushed garlic cloves,1 tsp cumin seeds,1 tbsp paprika,225g sweet potatoes diced,1 red pepper chopped,1 butternut squash peeled and chopped,1 can chopped tomatoes,200ml red wine,300ml vegetable stock,75g bulgar wheat


Cook onion and garlic in oil till soft. Add cumin and paprika. Cook 2 mins
Add potato, pepper, squash. Cook 2 mins
pour in tomatoes, wine and stock.Season and cook for 15 mins
Add Bulgar wheat. COver with a lid and cook for another 15 mins until all liquid has been absorbed and veg is soft
