Butter Bean Hotpot

I usually serve this with jacket potatoes, but it's equally good with pasta.

 
 
 
 

Ingredients

(Serves 4),One 15oz (225g) tin butter beans,One 15oz (225g) tin tomatoes,8oz bacon pieces,1 oz demerara sugar,1 level tsp dry mustard powder,1 tblsp black treacle,1 pint boiling water,Bay leaf and mixed herbs,Freshly ground nutmeg,Freshly ground black pepper,Salt,

Method

1. Set oven to 300 degrees F or Mark 2. Drain beans and place in a deep, buttered casserole dish. Add bacon pieces.
2. In a bowl mix the sugar, mustard powder and treacle with the boiling water. Add the tomatoes, stir well and pour over the beans and bacon. Add bay leaf, herbs, nutmeg and seasoning.
3. Cover casserole and bake in oven for 1 1/2 hours. Add cornflour if you prefer a thicker gravy just prior to serving.
