Broccoli lasagne

Easy - only one saucepan to wash!



3 tablesp. olive oil, 2 onions chopped fine, 2 cloves garlic crushed, 2 tablesp wholemeal plain flour, 1 tablesp. tomato puree, ½ pt milk, 1 400g tin chopped tomatoes, 2 tsp dried basil, 1 tsp dried oregano, Salt and pepper, 8 oz


1.Soften onion and garlic gently in oil 2.Add flour and cook, stirring for 1 minute 3.Add tomato puree and milk gradually, stirring 4.Add tomatoes, herbs, and seasoning to taste 5.Add chopped broccoli 6.Remove from heat and add cheese 7.Add some of the cooking water from broccoli to make a not too thick sauce 8.Layer sauce and lasagne sheets in an oiled dish – start and finish with sauce 9.Sprinkle as much or as little extra grated cheese on top, as you like 10.If possible allow to sit a few hours or overnight before baking 11.Cover with foil and bake at 200 C for about 30 minutes, then uncover and bake for a further 10 minutes or until brown/bubbling.
