Broad Bean & Cauliflower Curry - serves 4

2 cloves garlic chopped,2.5cm frsh ginger chopped,1 fresh green chilli chopped,2 tbsp oil,1 onion sliced,1 large potato chopped,1 tbsp curry powder,1 cauliflower cut into small florets,600ml veg stock,S & P,275g can broad beans,juice 1/2 lemo (optional),fresh coriander to garnish


Blend the , garlic, ginger chilli and 1 tbspn oil in a blender/food processor until the mix forms a paste.

In a large pan fry the onion and potato in the remaining oil, for 5 mins, stir in the spice paste and curry powder, cook for 1 min.add the cauliflower to the onion & pot and stir well until they all well coated and combined, then pour int he stock and bring to the boil over a medium to high heat.

season well, cover and simmer for 10 mins, add the broad beans with the liquid and cook, ncovered for 10 mins.

check the seasoning, add a the lemon juice, if using, and serve hot garnished with fresh coriander.
