Beef in White Wine
This is a good way to use up leftover white wine. Even if it's not a very nice one the result will be sublime!
- 350g Stewing steak (leg of beef or shin) cubedand coated in seasoned flour
- 150g sliced mushrooms
- 1 med pepper roughly chopped
- 1 med onion roughly chopped
- half bottle white wine
- 1 beef stock cube
- 1 heaped tspn cumin
- 1 heaped tspn paprika
- A sprig of rosemary and freshly ground black pepper to taste
- A little oil
Put oil in a flameproof casserole, fry onions for about 5 mins then add peppers and mushrooms, fry for 5 more mins then add meat and brown. Add herbs and spices then add the wine and bring to the boil and simmer for 3 minutes. sprinkle over beef stock cube and stir in. Cover tightly with a lid and place in the oven and cook at 140 degrees for 3 hours( or put in a slow cooker). Check after about 2 hours to make sure it does not dry out. Add a little water if necessary.At the end of cooking remove the sprig of rosemary and serve with fluffy white rice and green beans. Delicious!
