Beef with Herb Dumplings ( slo-cooker recipe )

just as it is, or with greens and mash



3 lb lean beef silverside or brisket, salt/freshly ground black pepper, 1 tbsp oil, 2 onions sliced, 4 carrots sliced, 1 parsnip cut into cubes, 12 baby potatoes, 2 tbsp wholegrain mustard, FOR THE DUMPLINGS, 4 oz self raising flour, 1 tsp baking powder, 2 oz shredded suet, salt / freshly ground black pepper, 2 tbsp chopped fresh mixed herbs such as parsleythymesage.oregano


(1) season the beef joint lightly all over with salt/pepper
(2) heat the oil in a large non stick frying pan and brown quickly on all sides, transfer to the slo-cooker
(3) add the vegetables to the frying pan and cook for 5-10 mins, stirring occasionally until golden brown, scatter them around the beef in the slo-cooker
(4) add about 1 pint of water to the frying pan, scraping up any sediments, and stir in the mustard.
Bring to the boil and pour *just enough* into the slo-cooker to cover the vegetables. Cover and cook on LOW
for 8-10 hours
(5) To make the dumplings, sift the flour with the baking powder and stir in the suet, seasonings and herbs
Mix in enough water to make a firm dough, divide the dough into 8 balls and arrange in the liquid around the beef
(6) cover and cook for a further 30-40 mins on HIGH
