Beef & Orange Casserole

Enjoy with dumplings jacket potatoes and green veg. Really warming dish after you've been out on a cold winters day.

 
 
 
 

Ingredients

These quantities feed two hungry adults! ,12oz diced beef,2 teaspoons mixed spice,2 teaspoons ground cloves,2 teaspoons ground cinnamon,2oz plain flour,1 onion diced,2 cloves garlic chopped finely,1 stick celery chopped,1 carrot diced (or could use 1 leek),1/4 pint water,1/4 pint fresh orange juice,100g chopped walnuts - yes I mean walnuts!,Half an orange peeled and cut into segments

Method

Mix together the flour and ground spices. Coat the diced meat and fry off for a few minutes. Put in the casserole dish. Fry the onion and garlic and add to casserole. Add the water/orange juice. Cook on a medium heat in a slow cooker for about 5 hours. After 4 hours add the remaining ingredients.
For conventional cooking in an oven I would suggest 2 hours at a medium temperature and increase the water/orange juice quantity.
