Beef Cakes with Beetroot

Ingredients

1 and a half lb minced beef, 1 lb pots cooked and mashed, salt / pepper, 4 small pickled beetroots chopped, 1 onion finely chopped, 1 tsp dried mixed herbs, 2 oz butter,

Method

mix together the beef,potatoes and salt /pepper to taste,
stir in the beetroot, onion and herbs. Roll the mixture
into 8 balls and flatten slightly to make cakes. Melt half the butter in a frying pan. Add half of cakes and fry for 20mins or until evenly browned and cooked through
drain on kitchen paper then cook the remaining cakes
