Beans Curry

Garnish with chopped coriander and serve piping hot with rotis and sambals.



1 cup beans - soaked overnight. ,1 litre water,1 large onion,2 medium tomatoes - chopped,3 whole green chillies,1 tsp turmeric,2 tsp curry powder,1/2 tsp cumin,1/2 tsp coriander powder,1/2 tsp salt,1 tsp mixed garlic and ginger,oil


Boil beans in water till soft and mushy. Beans must be boiled very slowly to wnsure that a thick, mushy gravy forms - add more water if needed.
When beans are ready, in another pot cook the whole green chillies ad onions in the oil till they are soft and pinkish. Then add in the tomatoes and cook until all the moisture has evaporated.
Then add in all the spices and 2 tablespoons water and cook till the masalas have blended thoroughly with the pureed tomatoes.
Add the above tomato gravy to the simmering beans and cook slowly till the gravy is thick and the onions cannot be seen anymore.
