Mash beans. Add to onion. Add tomatoes, breadcrumbs, nuts and parsely
Add enough egg to bind mixture.
Shape into four burgers. Chill for at least 2 hours
Brush with oil and BBQ or grill for 5 mins each side

Bean and pine nut burgers

Serve in buns with lots of salad and ketchup.
Ingredients
1 small onion,1 tbsp oil,1 chopped clove garlic,1 grated carrot,290g beans (i have used different types each time i made this- cannelini butter beans borlotti -whatever your favorite),4 cherry tomatoes finely chopped,100g fresh breadcrumbs,25g pine nuts,1 tbsp parsely,1 egg
Method
Cook onion in oil till soft. Add garlic and carrot and cook for another 2 mins. Put into bowlMash beans. Add to onion. Add tomatoes, breadcrumbs, nuts and parsely
Add enough egg to bind mixture.
Shape into four burgers. Chill for at least 2 hours
