Basic Chicken Balti

serve from the pan. Can be frozen.



1- 1.5kg of chicken (skinned) leave bones in.,3 tbsp oil.,3 medium onions sliced.,3 tom;s sliced.,1inch stick of cinamon.,2 cardamon pods.,4 black peppercorns.,1/2 tsp cumin seeds.,1 tsp fresh grated ginger.,1 tsp crushed garlic.,1 tsp garam masala.,1 tsp chilli powder.,1 tsp salt.,2 tbsp natural/greek yoghurt.,4 tbsp lemon juice.,2 tbsp fresh coriander.,2 fresh green chillies chopped.


heat the oil, add the onions anmd fry until they are golden brown, and the tom's and stir well.

add the cinamon stick cardamons peppercorns, cumin seeds, ginger, garlic, g masala, chilli powder and salt. Lower the heat and stir fry for 5 mins.

Add the chicken, 2 at a time stir after each addition to coat in the sauce and then stiry fry for 7 mins, until the chicken starts to brown.

add the yoghurt and mix well.

lower the heat and cover the pan with tight lid or foil, cook very gently for 15 mins, checking a couple of times that the mix hasn;t stuck to the bottom of pan.

then add the lemon juice, coriander and green chillies.
