Baked chicken massala

Serve immediately with a green salad and potato wedges with steamed rice.



4 boneless skinless chicken breasts; 2 tbsp olive oil; 1 tsp ground cumin; 1 tsp paprika; 1/2 tsp turmeric; 1/2 tsp salt.


Cut slashes crossways on each chicken breast and place in a shallow, ovenproof dish.
Put the oil in a small saucepan and stir in the spices and salt. Warm through but do not boil. Brush all the marinade over the breasts, making sure each one gets a good coating. Either leave in a cool place for at least two hours or place in the fridge to marinade overnight.
Heat the oven to 200C/400F or Gas Mark 6 and place dish in centre.
Cook for about thirty minutes or until the chicken is cooked through.
