Bahaman Chicken

This is one of our favourite dishes, first eaten in Bahamas.It is served with spaghetti -a baked potato is optional
Ingredients
4 Chicken breasts
2oz butter
1 large onion thinly sliced
1 green pepper, thinly sliced
clove garlic, crushed
tsp oregano
TIN HEINZ Tomato soup
Chicken stock
2tbsp red wine
salt and pepper to taste
Method
Brown Chicken breasts in 1oz butter. Move to a plate. Fry onion, garlic and green pepper until soft, in the remaining butter. Add chicken to the pan, followed by the tin of Tomato soup. Stir well. Add 2-3 tbsp red wine or chicken stock. Add the oregano, salt and pepper to taste. Bring to the boil then cook in oven Mark 6/7 for 40 minutes until chicken cooked. Serve with long pasta.
