Bacon & Onion Roll
I would serve this with shreeded savoy cabbage and carrots, with a generous portion of thick oniongravy.
225g SR Flour,170g (6oz) Bacon Chopped,125g Beef or Vegetarian Suet, 1 Onion Chopped, tsp dried Sage Leaves, Pepper
Sieve the flour and salt into a large bowl. Add suet and mix lightly. Mix with sufficient water to make a soft, but firm, dough. On a lightly floured work surface knead the dough until smooth. Roll out to a 1/4 inch thickness. Mix the Bacon, onios, sage and season to taste, and spread the mixture over the rolled out dough. Dampen the edges and roll up lightly, seal the edges. Wrap the pudding in either a scalded well floured cloth and tie up the ends or in a layer of greaseproof paper then tin foil. Place in a steamer or boil for 2 - 2 1/2 hours.
