Bacon/Salami Pasta Salad

A delicious salad which can be served hot or cold as a main or side dish, made with bacon or salami. Everytime we are invited to a bbq we are asked to take this salad along.

 
 
 
 

Ingredients

1 tsp cooking oil, 200gms garlic salami or 4 rashers bacon chopped,1 large onion peeled and diced,1 400gm can of tinned chopped tomatoes incl juice, 1/2 tsp dried oregano, 1 red chilli deseeded and finely sliced, 1/2 cup of cream, 350gms la

Method

If making with salami, add chopped salami to non stick frypan and fry on low heat, the fat in the salami will create its own cooking oil fry for 2-3 minutes, add chopped onions and cook until onions are soft. Add oregano and tinned tomatoes then simmer until sauce has reduced to about half, stir in cream and simmer for a few more minutes. Cook pasta according to instructions on packet (al dente), drain pasta and stir in sauce intil pasta is completely covered. If using bacon start dish by adding 1 tsp oil to frypan, then add chopped bacon along with onions and continue from there.
