Bacon Hot Pot ( In a slo-cooker )

lovely served with a mound of fluffy couscous or mashed potatoes
Ingredients
1 tbsp olive oil, 1 large onion chopped, 2 celery sticks chopped, 3 carrots sliced, 2 parsnips sliced, 2 tbsp plain flour, half a pint of apple juice ( sharp tasting variety ), quarter pint of veg stock, 1 and a half pounds lean unsmoked ( bacon joint ),cut into cubes, 8 oz baby salad potatoes thickly sliced
Method
(1) heat the oil in a large saucepan, and add the onion, celery, carrots and parsnips. cook for about 5 mins, stirring occasionally, without browning(2) stir in the flour then gradually stir in the apple juice and stock
(3) put the potatoes into slo-cooker, followed by the bacon.Pour the vegetable over the top and stir gently
(4) cover and cook on low for 6-8 hours
