BEEF en daube

serve on plates w potatoes and vegetables i would serve wtoasted pumperknickle bread as a base for the dish



1/2 c green olives,1/2 c fresh orange juice,15 anchovy fillets,1/2 c pimentos,2 garlic cloves,1 tblsp shallots,1c tomato juice,1c dry red wine,combine in blender till smooth,meat;,4 tblsp olive oil,2 lbs lean beef cut in 1 in pieces,salt/pepper,4whole cloves,1/2 tsp oregano,jigger brandy,parsley,


preheat oven 375o
heat olive oil large casserole
brown meat cover beef w/sauce
add salt/pepper/oregano/brandy/etc
cover and bake 21/2 hrs
sprinkle w/parsley
u can add carrots/potatoes if u like
