Arabian Bean Salad or Ful Madammas

Ingredients

1 cup dried beans (soaked overnight) -i used Aduki,8 cups of water,1 medium tomato chopped,1 clove garlic chopped,1/4 cup chopped parsley,1 cup chopped onion,Dressing,1/2 cup olive oil,juice of one lemon,salt and pepper to taste

Method

Place beans in a medium pan and add 4 cups of water. Bring to boil turn off the heat and let stand for one hour. Drain
Return the beans to the pot and add 4 cups of fresh water. Bring to boil , cover and let simmer for 15 mins or until beans are tender. Drain
Mix the beans with the tomato, garlic and onion
Mix dressing ingredients and then toss into salad
Chill before serving
Serves 4
