Apple and mustard pork
A mid week warmer.
- 4 pork loin steaks,
- 2tabsp olive oil,
- 2 onions, chopped
- 1tabsp whole grain mustard
- 4tabsp apple sauce, from a jar is fine,
- 300ml chicken stock
Sprinkle the steaks with salt and pepper. Heat the oil in a frying pan, add the steaks and fry over a fairly high heat, turning once to brown both sides. Remove from the pan and keep warm. Add the onions to the pan, stir around and fry until softened and lightly tinged brown . Stir in the mustard, apple sauce and stock, bring to the boil. Return the steaks to the pan and let them simmer away in the sauce for about 10mins, turning them once to make sure they are evenly cooked. Serve with mashed potatoes.
