An Easy Chilli Con Carne Recipe

2 onions,1 large carrot,1 red pepper,2 fat cloves of garlic crushed,2 x 400g tins of chopped tomatoes ,1 tablespoon tomato puree,500g good minced beef,2-4 heaped teaspoons dried chilli flakes,1 heaped tsp ground cumin,1 tsp dried thyme,1/2 bottle full-bodied red wine,2 cans of red kidney beans,A bunch of fresh coriander finley chopped,Generous splash of Worcestershire sauce,Salt and pepper,,,


Finely chop the onion, pepper, carrot and garlic, in a food processor if possible. Gently fry in some olive oil with 1 tsp of salt for about 15 mins, until soft.

Add the mince, turn the heat up to medium, and cook until browned, stirring constantly to stop lumps forming.

Then simply stir-in the rest of the ingredients, although at this stage only add the coriander stalks (finely chopped), reserving the leaves until later.

Bring to boiling point and simmer on a fairly low heat so it's bubbling steadily, but not too high or it will burn. Allow to simmer for 1 and a half hours, stirring regularly and adjusting the heat if necessary.

Then stir in the remaining coriander, and serve with steamed white rice and mexican flatbreads. For best results make a day or two before eating, which allows the flavours to develops.
