All Day Breakfast Quiche

A friend christened this dish which is an all time favourite with the family.



1 pkt frozen puff pastry 7 lge eggs 200 grams lardons 250 grams mushrooms sliced 150 ml single cream 150 ml milk 100 grams grated mature cheddar cheese Pepper


Cook the lardons in their own fat, drain into a sieve onto kitchen roll. Cook the mushrooms until soft in a little oil - adding water if necessary. Line a flat baking tray with a large piece of tin foil. Roll out the pastry 2 mm thick and big enough to fit a 26 cm flan ring or tin making sure the pastry comes right up the sides. Line the pastry case with greaseproof or cooking paper and fill with baking beans. Put onto the baking tray and bake in a hot oven on the metal tray at 210 deg C for 10 minutes. Take out of the oven and remove the beans and paper. Turn the oven down to 160 deg C. Whisk the eggs and brush the flan case with a little egg. Return to the oven for 1 minute. (Fold the tin foil around the edges of the flan case - this will prevent the pastry from burning) Spread the cheese on the bottom of the flan followed by the mushrooms and finally the lardons. Whisk the eggs once more; add the cream, milk and pepper. Put the mixture into a jug and place the flan on the metal baking tray in the centre of the oven. Carefully pour the egg mixture into the flan taking care not to touch the tin foil. Bake for about 35 minutes until golden brown and just firm to the touch.
