ACHAR GOSHT CURRY

Ingredients

8/10 Squat large green Chillies –slit lengthways from one side,1-1½ kgs Lamb/Beef/Chicken thighs cut into cubes ,2 tablespoons ginger paste,2 tablespoons garlic paste,3-4 tablespoons Lemon Juice ,1 large Onion chopped,500g Tomatoes (6 medium- skinned) - grind & make into puree ,2½ cups plain yoghurt ,1½ cups Ghee/vegetable Oil ,2 bay leafs,One packet Shan Achar Gosht Spice Mix (use less for mild hot),,

Method

METHOD

1. Mix two tablespoons Shan Achar Gosht Spice Mix with lemon juice and fill it into the silted green chillies.

2. Heat up ghee/oil until hot, add the chopped onion and cook until they start to turn brown, remove from heat.

3. Brown meat, remove from heat.

4. Fry garlic, ginger and bay leafs for few minutes. Then add yoghurt, tomato puree, the remaining quantity of Shan Achar Gosht Spice mix and add 1-2 glasses of water. Cover and cook on low heat until meat is tender.

5. Place the spice filled green chillies over the meat. Cover and cook on low heat until meat is cooked & ghee/oil has separated from the gravy.
