3. Leek and Potato pottage. Suitable for vegan and vegitarian diets.

Serve with crusty bread or Grand Ma Jan's Garlic crutons or Grand Ma Jan's Garlic and Parmasan crutons.



Chilled basic pottage (about 3 ladles),1 large or 2 small fresh leeks - cut into 1 inch bits,Equivilent of 3 medium spuds - peeled and cubed,Salt and pepper.,,


Put leeks and spuds into pan.
Add enough boiling water to cover.
Simmer until leeks and spuds are tender.
Lift out a few leeks and spuds into a dish for each serving.
Blend remaining with swizzle stick.
Put saved whole leek and spuds back into pan.
Add 3 ladles of basic veg pottage.
Bring to boil. Test for seasoning.
