Summer Kiwi Muffins
A recipe for a simple and very moist muffin with a delicious summery taste - top/ decorate if you prefer to do so using a mixture of mashed kiwi and whipped cream/ fromage frais. For a little variety, you could replace one of the kiwi with a small mashed banana. Kids love 'em!
Light Brown sugar
50g/2oz Butter/ Marg
240ml/8fl.oz. Soured cream
2 medium eggs
175g/6oz Plain Flour
3/4 tsp Baking Powder 1-2 tsp mixed spice 1 tbsp sugar crystals
Preheat your oven to 190c Gas mark 5 and line a muffin tray (makes 12 muffins) Cream the butter and sugar until the mixture turns a shade lighter and is fluffy. Sift together the flour, baking powder and mixed spice into a separate bowl. Add the sour cream and eggs to the butter and sugar mix and mix well - adding some of the flour mix if it gets runny or looks like it might split. Fold in the remaining flour - don't mix too vigorously - until just combined. Next add the kiwi fruit and again, fold into the mixture gently. Fill each muffin holder to approx 1/3 full and sprinkle with sugar crystals or dust with a little more mixed spice. Then place into the middle of the preheated oven for 20-25 mins or until light golden brown and springy to the touch. Cool and serve and enjoy!
