Kiwi Fruit Mousse

The children love this as an extra with ice cream! This recipe makes enough for four small servings.
Ingredients
1 and a half kiwi fruit
1 egg white
25g caster sugar
1 tablespoon fromage frais
15g toasted almonds (chopped)
mint leaves (to garnish)
Method
Finely chop 1 kiwi fruit, and thinly slice the other half kiwi. Whisk the egg white till stiff, then add half the sugar, whisk till stiff and glossy. Gently fold in the rest of the suger, then stir in the fromage frais. Add the egg white and half of the chopped almonds to the chopped kiwi fruit. Spoon into dishes, and garnish using the remaining chopped almonds and sliced kiwi - adding a sprig of mint to the side.
