Kiwi Butterfly Muffins
I used to make these kiwi muffins when I lived in New Zealand, just to get rid of the glut of them, I also used Fijoas in the same way.
2 kiwi Fruits
4oz SR Flour
4oz Caster Sugar
For the butter icing
2 tbsp of lemon curd
2oz icing sugar
2 sliced kiwi fruits
Chop 2 kiwi's into small cubes, beat the butter and sugar until light and fluffy, beat the eggs separately then add to the butter mixture with the SR Flour and whisk until light and fluffy. Fold in the chopped kiwi, spoon into muffin cases and bake for 25 minutes at 170. Allow to cool, beat the remaining butter lemon curd and icing sugar until light and fluffy, cut the tops of the cooled muffins, pipe or spoon the butter icing onto the tops, cut in half the top of the muffin and replace it on the top of the icing to form 'butterflies'. Slice the remaining 2 kiwi's and place in the middle of the 'butterfly' sprinkle with shifted icing sugar and hey presto! Serve with ice cold white wine.
