Easy Kiwi Fruit Smoothie
This kiwi fruit smoothie is an old favourite of mine. It's perfect for the end of a hot summer's day, as the sunlight begins to draw golden, but before it's cool enough for the evening meal to attract.
This smoothie is thick and creamy from the bananas, melt-in-the-mouth from the last slivers of melting ice cubes, but with just enough zing from the blueberries and kiwi fruit, which also turn it a satisfying green. It's also super easy and can be whizzed up in 30 seconds.
Enough for 2 large glasses or 4 small ones
1 kiwi fruit, washed, peeled and roughly chopped
2 medium bananas, peeled and roughly chopped
1 handful of frozen blueberries, washed
About 8 ice cubes
A generous slug of orange juice
Put everything in a blender or smoothie maker. Blend until the ice cubes are almost all gone and the smoothie is thick and fluffy.
If the mixture becomes too thick while blending, just add a little cold water and pulse for a couple of seconds more.
Pour the smoothie into the glasses immediately and add a couple of straws.
These smoothies are best served immediately but will keep for a couple of hours, chilled. If they sit for a while before serving, they will tend to separate. Just return to the blender for a moment or two and they will fluff up again - but they won't be as melt-in-the-mouth without their ice cube slivers.
