fold filo sheets in half, to make double layered 6 inch squares, and brush a little oil around the edges, to make a 2 inch border.
(2) spoon 1 tbsp. mincemeat along 1 half of each pastry square, stopping 1 inch short of the ends, then roll up each loosely to form a cigar shape, then place them seam side down onto a non stick baking sheet. Pinch in both ends then fan out the edges to form a cracker shape.
(3) brush any remaining oil over the surface of each cracker, bake them for 10-12 mins. until golden brown. Leave the crackers to cool slightly before carefully removing from the baking sheet.
(4) Dust the crackers with icing sugar.

mincemeat filo crackers

serve them warm, with ice cream, or whatever you prefer. When I serve them, I stand them upright in a glass on the table, and let everyone help themselves.
Ingredients
12 sheets filo pastry each at least 6x12ins., 1 tbsp. sunflower oil., 14 oz ready-made luxury mincemeat., 2 tsp. icing sugar ( sifted )
Method
(1) heat oven to gas mk. 6.fold filo sheets in half, to make double layered 6 inch squares, and brush a little oil around the edges, to make a 2 inch border.
