White chocolate and raspberry cheesecake

A yummy cheesecake, looks very pretty and girly!



Basic cheesecake recipe using digestive biscuits (on profile), Tin of raspberries in fruit juice, 100g white chocolate, Some cornflour


Make base and prepare filling. Drain raspberries well but reserve juice. Melt chocolate and stir through the filling well. Gently fold in the raspberries but try not to break up too much. Spread over base and chill. To make a raspberry topping, heat the reserved juice with some cornflour blended with a little water until it thickens. Cool mixture and whilst its still pourable, spread over filling.
