Makes six greedy or 8 normal servings!
Ingredients
75g. caster sugar; 2 Tbsp.cornflour; pinch salt; ,450 ml.milk; 2 egg yolks lightly beaten; 2 Tbsp.butter; ,1 1/2 tsp vanilla essence; 3/4 tsp.almond essence;,2 Tbsp. Cointreau/sherry or brandy; 1 jam-filled swiss roll; 600gm sliced strawberries; 284ml.double cream; ,1 tsp.grated plain chocolate or cocoa powder.
Method
Mix caster sugar and cornflour in a large saucepan with a couple of Tbsp.of the milk.Add the rest of the milk and heat until it begins to boil, stirring constantly. Stir at least half of the mixture into the beaten eggs and return to pan. Bring back to boil, stirring constantly, then simmer gently for about a minute, until it starts to thicken.
