Steamed Sponge Pudding

I make this pudding plain and then add syrup or jam when I serve it. To make a larger pudding, use half as much again and 2 eggs. I prefer to stand the pudding basin in constant simmering water with a lid on the pan, rather than place it in a steamer above the boiling water.
Ingredients
2 oz butter, 2 oz margerine, 4 oz sugar, 8 oz SR Flour, 1 egg,1/4 tsp baking powder,pinch salt,milk to mix
Method
grease a pudding basin (with lid) with margerine and then flourcream fat and sugar until light and fluffy.
beat in egg thoroughly.
fold in flour, salt and baking powder.
