Saffron Senior's Ice cream

If wanting chocolate, melt plain chocolate (6oz) and add with the cream. Coffee and walnut works well. Ribena makes lovely blackcurrant ice cream (needs to be quite strong). Baileys is great in this recipe.
Ingredients
4 eggs - separated ...,4 oz caster sugar ...,1/2 pint double cream whipped ...,vanilla essence ...
Method
Whisk the egg yolks in a small bowl until blended. In a larger bowl whisk the egg white until stiff. Then whisk in the sugar a teaspoonful at a time. The whites will get stiffer and stiffer as the sugar is added. Fold in the egg yolks until no streaks. Whisk the cream until it forms soft peaks and then fold into the mixture. and add vanilla essence if liked (1 teaspoon).Turn into a 2 1/2 pint container and freeze.
