Melt chocolate and remove from heat . Cream butter and sugar till light and creamy Add almonds egg yolks and breadcrumbs. Slowly add chocolate. Whisk egg whites till stiff peaks and add whites slowly to chocolate mixture . Pour into prepared tin and bake for approx 1hr 20 mins tilll skewer inserted into centre comes out clean . Cool for 5 mins in tin then transfer to cooling rack till cold.
Warm jam and brush over cake .
Make Ganache by putting chocolate butter and cream into bowl and melt. When melted stir just ONCE (will get too thick otherwise ). pour Ganache over centre of cake and allow to run down sides.
Decorate as desired .
Will keep for several days in tin

Cut into small slices very rich.
Ingredients
11oz Dark Chocolate (broken ),8oz unsalted butter,8oz golden caster sugar,8oz ground almonds,8 large eggs,4oz fresh brown breadcrumbs,4tbsp apricot jam,Ganache,6oz dark chocolate 3oz butter,4 tbsp double cream
