Rhubarb and orange water Ice

most pink forced rhubarb is quite sweet, If yours isn't add a little more honey ( or sugar ) to taste.

 
 
 
 

Ingredients

12 oz rhubarb, 1 med. orange, 1 tbsp. clear honey, 1 tsp. powered gelatine, orange slices to decorate

Method

(1) trim the rhubarb and slice into 1 inch lengths, put into a pan without adding water
(2) finely grate the rind from the orange and squeeze out the juice. Add about half the juiceand all the grated rind to the rhubarb in the pan and simmer until rhubarb is just tender. Stir in the honey.
(3) heat the remaining orange juice and sprinkle in the gelatine to dissolve it. Stir into the rhubarb. transfer mixture into a rigid freezer container, and freeze for about 2 hours until slushy.
(4) remove from the freezer, put in a bowl and beat it well
to break up the Ice crystals. return to rigid container, and freeze again until firm.
Allow water-Ice to soften slightly at room temperature
before serving.
