Turn out to serve. Very good with strawberries in balsamic vinegar:- 1 lb. strawberries, halved and heated with 2 tablespoons icing sugar and 1 spoonful of water until juices start to run. Add a couple of teaspoons of balsamic vinegar and heat gently until sticky. Leave until cold and serve a spoonful alongside the pannacotta.
MethodSoften gelatine in milk, then heat in a cup in microwave until completely dissolved.
Put mascarpone, cream, sugar & vanilla pod into pan on low heat and slowly bring almost to boil, stirring.
Add dissolved gelatine, bring right up to boil and strain into jug.
Pour into 4-5 small, very lightly oiled ramekins and chill until set.
