Macadamia & Apricot Ice Cream

Serve in slices (if made in loaf tin)
Ingredients
1 litre cream chilled (didn’t say which type but have asked on this site and am advised it would be double),1 ½ cups sweetened condensed milk,Rind of 1 lemon and 1 orange (un-waxed),1 teaspoon lemon juice,1 teaspoon vanilla essence,½ cup apricot jam – melted,1/2 cup chopped dried apricots,1 cup toasted macadamia nuts (if salted salt rubbed off) – roughly chopped,,
Method
Whip cream until a pour-able custard consistencyUsing a wooden spoon, fold in the condensed milk, then all other ingredients. Place in individual moulds or a large container (she used a loaf tin – lined with greaseproof paper). Freeze.
