MY LATEST BREAD & BUTTER PUDDING

Bake in oven at 180 C until ready (firm to the touch). Try not to over cook it.

 
 
 
 

Ingredients

1 Brioche loaf,¾ pint of milk,¼ pint of double cream,Butter (enough to butter the sliced loaf),4 large eggs,2 – 3 oz mixed dried fruit (according to taste),Few chopped glace cherries (optional of course),Golden caster sugar to taste (just less than a couple of tablespoons),Nutmeg

Method

1. Thickly slice and lightly butter virtually the whole of the loaf (12 slices) and place 6 of the slices in buttered (blue) oblong shallow dish.

2. Sprinkle half the dried fruit, cherries and caster sugar over.

3. Place a further 6 slices of Brioche and sprinkle with the fruit, cherries and sugar in the same way.

4. Whisk four eggs. Heat in a pan the milk and cream (DO NOT ALLOW TO BOIL).

5. Pour milk onto the eggs, whisking at the same time. Pour this mixture over the bread while sieving it at the same time.

6. Grate nutmeg (plenty) over.

7. Leave to stand for a while… 15 minutes?
