Put the remaining lemon juice, rind and a couple of tablespoons of icing sugar and heat through until you have a lemon syrup. Leave to cool. Pick out lemon and put it on the cheesecake. Drizzle the lemon syrup over the top.

Lemon Cheesecake

Ingredients
,Biscuit base - ,,6oz digestives,3oz melted butter,,Crush biscuits and add to melted butter and press down in 8” cake tin,,Small tub half fat cream (Philly) cheese,Half a pint double cream,Juice of 2 lemons,Rind (do with zester) of two lemons,3 or 4 tablespoons of icing sugar,,,
Method
Whip cream and add 2/3 lemon juice (slowly) and 2/3 of the rind. Whip cream cheese and mix together with the cream. Add icing sugar to sweeten to your taste. Put on top of the biscuit base.Put the remaining lemon juice, rind and a couple of tablespoons of icing sugar and heat through until you have a lemon syrup. Leave to cool. Pick out lemon and put it on the cheesecake. Drizzle the lemon syrup over the top.
