Gwent Gooseberry Cream Welsh recipe no. 2

eat straight from the ramekin, yummy.
Ingredients
1 pound gooseberries, 3/4 oz of caster sugar, 8 ozs double cream , 5 ozs plain yoghurt, a few drops of vanilla essence, 1 tsp icing sugar, 6 dessertspoons demarara sugar.
Method
Poach the gooseberries in a saucepan with a very little water and the caster sugar. Keep them whole by poaching gently and add more sugar if preferred. when cool, spoon gooseberries, with a littlle juice into 6 ramekin dishes. Beat the yoghurt and cream together until they form soft peaks, fold in vanilla essence and icing sugar and spoon the mixture on top of the gooseberries. Sprinkle a dessert spoon of demarara sugar over the top of each ramekin. Cover with cling filmand refrigerate for several hours. The sugar formsa nice crunchy topping.Recipe images are not uploaded yet.
