Beat the egg yolks with the vanilla essence and 65g of sugar.
Add the grated lemon rind and the juice, with the pinch of salt.
Beat well and mix in the flour.
Whip up the egg whites until stiff adding 60g of sugar half way through.
Fold the egg white into the lemon batter and pour into the cake tin.
Top it with the stoned ripe cherries and bake for 50 mins...

We like this with vanilla ice cream or creme fraiche.
Ingredients
4 eggs separated,1tspn vanilla essence,125g caster sugar,grated rind of a lemon + 1 tbspn of lemon juice,pinch of salt,80g flour,250g stoned cherries,,22cm cake tin,,,,
Method
Preheat oven 180CBeat the egg yolks with the vanilla essence and 65g of sugar.
