Ingredients
This does a crumble for 4 - 6 ,6 oz digestive biscuits whizzed into crumbs,4 oz butter,4 oz demerara,1 rounded teaspoon cinnamon,
Method
Melt butter in small saucepan then add the demerara, biscuit crumbs and cinnamon. Stir over v. gentle heat for 3/4 mins then pile on top of the cold fruit. In the one referred to in the thread I cooked apples in the normal way and added some ready to eat apricots. Bake as in introduction. Can be served cold or warm. It is v. good with Delia's mascarpone and fromage frais vanilla cream (Summer Cooking). i.e. the one served with the peaches/nectarinesRecipe images are not uploaded yet.
