Fruity Apple and Mincemeat Crumble
This is ideal for the autumn time if you have a surplus of apples and pears, and need a quick (ish) and satisfying pudding for familyand friends
125 gm plain flour, plus 1 tablespoon extra
125 gm butter, cubed
175 gm muscovado sugar
1 level teaspoon cinammon
zest 0f 2 lemons and juice of 1 lemon
4 large apples and pears, peeled, cored and cut into chunks
4 tablespoons mincemeat (you can use a whole jar if liked)
Pre-heat the oven to 200C (180 fan) gas mark 6
First make the crumble by putting 125 gm flour into a large bowl. Add the butter and rub in until the mixture resembles breadcrumbs. Stir in 125 gm sugar, add the cinammon and half the lemon zest. Chill
Put the fruit into a 2 litre shallow, ovenproof dish and add the mincemeat, remaining sugar, 1 tablespoon flour,lemon juice and remaining zest. Stir well.
Sprinkle the crumble mixture evenly over the fruit. Bake for 45 minutes until the crumble topping is golden and the fruit is tender. Serve warm with custard, cream or ice-cream.
