Easy Chilled lemon flan

Just before serving decorate with the whipped cream and lemon slices. (optional)
Ingredients
For the flan case;,7 oz digestive biscuits (or ginger ones),2 oz butter,1 level tablespoon castor sugar. ,,For the filling;,10 fl oz double cream,6 oz can condensed milk,2 large lemons (finely grated and juiced). ,,For the topping;,lightly whipped double cream,fresh or crystallized lemon slices,,,
Method
Crush digestive(ginger) biscuits with a rolling pin. Melt the butter in a pan, add sugar then blend with the biscuit crumbs. Mix well. Turn into a 9 ins flan dish and press into shape round base and sides of the flan dish. Bake in a slow oven for 8 mins. Remove from the oven and leave to cool.
