Easiest Ever Lemon pie

This is a lovely refreshing dessert, especially good to serve after curries or other spicy dishes.
Ingredients
250g pack ginger nut biscuits-get a decent brand!;,50g melted butter; 400g tin condensed milk; 284ml carton double cream; finely grated rind 3 large unwaxed lemons plus 150ml of their juice.,20cm loose based flan tin.
Method
Put biscuits in a food processor and crush to crumbs. Or place in a plastic bag, then crush with a rolling pin. Mix in a bowl with the melted butter and press into base of flan tin.Thoroughly mix condensed milk and cream (Don't whip the cream!) Add lemon zest, reserving a little for decoration, and the juice.
