Submitted by Molly 11 June 2009

This is a lovely refreshing dessert, especially good to serve after curries or other spicy dishes.

Put biscuits in a food processor and crush to crumbs. Or place in a plastic bag, then crush with a rolling pin. Mix in a bowl with the melted butter and press into base of flan tin.
Thoroughly mix condensed milk and cream (Don't whip the cream!) Add lemon zest, reserving a little for decoration, and the juice. Stir until mixture thickens. Por onto biscuit base. Decorate with remeining lemon zest. Chill overnight.
