Danish Girl in a Veil
An elegant, tasty but simple dessert...
4 ~ 5 slices bread (wholemeal tastes best)
4 oz butter
2 oz sugar
2 oz dessicated coconut
1 Chocolate Flake bar
1 lb of apples
NB other fruits can be used, eg apricots, rhubarb, pie filling, etc
Peel and core apples, slice and place in saucepan with 1 oz sugar and 2 tablespoons water. Cover and simmer for 10 minutes or until soft.
"Liquidise" the slices of bread to make breadcrumb, and fry in butter til golden brown. In a mixing bowl add remaining sugar and coconut to breadcrumbs. Zest the orange and stir in. Add the orange juice to the fruit.
Spoon one quarter of the apples into the base of each of 4 glasses, top each with one quarter of the breadcrumb mixture, top with the crumbled Flake bar and serve cold with added cream if required.
