Coconut pyramids

Serve white and coloured pyramids together.

 
 
 
 

Ingredients

1 14-oz. can sweetened condensed milk;,1 12-oz. package dessicated/flaked coconut ;,few drops of red food colouring,To decorate (optional):,3 oz. milk chocolate chopped; glace cherries halved.,

Method

Preheat oven to 375°F (190°C). Line 2 baking sheets with parchment paper.
In a large bowl, stir condensed milk, coconut with wooden spoon until combined. Divide mixture in half and colour one half with a few drops of food colouring.
Shape mixture into large walnut-sized balls. Place balls about 1-1/2 apart on lined baking sheets.
Bake in preheated oven 15 to 18 minutes or until golden brown. Cool on baking sheets on wire racks for 5 minutes. Remove from baking sheets; cool completely on wire racks.
To decorate, melt chocolate in a small heavy saucepan over very low heat; stir until smooth. Let cool.
Dip tops of coconut pyramids into melted chocolate. Decorate with cherry halves. Let stand until chocolate is set.
