Coconut Rice

Serve as you would any rice.

 
 
 
 

Ingredients

250g Basmati Rice soaked for one hour,1 tbsp olive oil,540 ml coconut milk,1 tsp salt,1 bay leaf (optional)

Method

Wash rice after soaking, and drain.
Heat oil in saucepan, add rice and stir fry for about 2-3 minutes.
Add coconut milk, salt and bay leaf.
Bring to the boil and cook til rice has absorbed the liquid.
Lower heat, cover saucepan tightly with lid and leave to 10-12 mins. Keep an eye to prevent burning !
Discard bay leaf before serving hot.
