A light alternative to traditional Christmas pudding or trifle...
1 pkt raspberry jelly
6 oz mixed dried fruit
2 oz glace cherries
Make up the jelly as per the packet instructions, (replace some of the water with an equal amount of port if liked), leave to cool. When just on the point of setting, stir in the fruit and pour into a very lightly greased 1.5 pint pudding basin. Leave to set.
When set and ready to serve, quickly dip the base of the basin into very hot water, then invert over serving dish. Give one good shake ~ this should loosen the jelly ~ and the basin can be removed. Decorate with a sprig of holly.
