Chocolate Rice Pudding
Rice pudding with chocolate....what's not to like?
- 500ml milk -
- 300ml double cream (all milk ok too) -
- 100g pudding rice -
- 75g caster sugar -
- 25g cocoa powder -
- 1tsp vanilla extract
Place half the cream and milk into a large saucepan, add the rice and heat gently stirring, bring to a boil. Turn off the heat, place a well fitting lid onto the saucepan and leave for an hour. After the hour, take off the lid and add the remaining milk, cream sugar and coca powder, stir well until combined. Bring back to the boil, stirring frequently to avoid sticking. Boil gently for 15mins until slightly reduced and sticky. Place the lid back on the saucepan for 30-45 mins. After that time If you think it's too thick for your liking thin with more milk. Place into individual ramekin and serve. Nice hot or cold.
